Friday night toast!

Ok so I really have cheated here! Busy week so I can be forgiven.  There is not really a recipe, more of a selection of foods!


Smoked mackerel on ciabbata, with water cress salad.




Toast the ciabatta with a drizzle of olive oil and place the smoked mackerel on top.  Drizzle with lemon juice and serve with watercress and rocket leaves.

See, I said it wasn't a recipe but served with a good chilled wine (courtesy of the father-in-laws wine club) it was a lovely, quick meal. In fact it was quicker than finding the takeaway menu. I know, I tried!
